This morning I made breakfast cookies that were based on this recipe. they were super fast, and, as far as I can tell, not less healthy than anything else I eat for breakfast :)
Delicious Breakfast Cookies
1 c brown sugar
1 1/4 c oats
2 c whole wheat flour
1 1/2 t baking soda
1/2 t baking powder
1/2 t salt
1 t cinnamon
1/4 t nutmeg
1/8 t ginger
Combine all of these ingredients in a bowl. Then add:
1 c pumpkin puree
2 eggs
1 t vanilla
1/2 c craisins
1/4 c chocolate chips
Combine. Drop by heaping spoonfuls onto a cookie sheet sprayed with pam. I put a piece of foil on my cookie sheet, sprayed it, then dropped on the dough. This made 19 cookies for me. Bake 350 for about 12-14 min.

a few weeks ago. I used pumpkin instead of baby food. Guess we love our cookies any time of the day!
I remember talking to my mom while I was making similar cookies for you girls and trying to convince her that cookies for breakfast could be a good thing! Love to all of you in cookie land.
